Mussels with Marinara Sauce
Ingredients (makes 4 servings)
- 1200g medium mussels
- 1/2 tsp sweet paprika
- 1 tbsp wheat flour
- 1 medium onion
- 4 tbsp olive oil
- 1/2 glass of white wine
- 20g parsley
- 2 garlic cloves
- salt and pepper to taste
- fish stock
Clean the mussels , removing the beards and cleaning the shells. Peel and finely dice the onion and garlic. Then in a deep pan with 2 olive oil teaspoons, lightly brown both. Add the sweet paprika and flour, mix all together. Add the white wine and let evaporated the alcohol. Next add the boiling fish stock and boil for 10 minutes until obtain a textured sauce, then add salt and pepper. Add 1 tablespoon of finely chopped parsley. Next add the clean mussels, cover and cook until they open. Served in a bowl and add the rest of the chopped parsley.
