Russian Salad

Serves 4

4 medium potatoes
2 carrots
3 eggs
80g green olives
2 ripe tomatoes
150g canned tuna in oil
4 prawns (shrimps)

Rinse the potatoes and carrots. Then bring the potatoes to the boil in salted water for approx. 16 mins. Also bring the carrots to the boil for 6-7min and after removing them from the heat cool them down in iced water.

Then peel the potatoes, and cut them, along with the carrots, into cubes. In another pan boil the eggs for approximately 10 mins and cool then down in the same way.

Boil the prawns for 4 mins, and also set aside to cool. Slice the olives, and blanch, peel and cube the tomatoes. Peel the eggs and cut them into cubes.

In a large bowl mix all the ingredients together – potatoes, carrots, hard boiled eggs, olives, tuna and mayonnaise. Refrigerate to cool further and serve cold.
