Roasted apples filled with rice pudding

Ingredients (makes 6 servings)
- 6 Fuji apples or any other preferred type
- 150 g dessert rice
- 750 ml full fat milk
- 1 vanilla pod
- 150 g sugar
- 50 g butter
- a pinch of salt
Start by heating a lot of water in a pan until boiling. We then add the rice and a pinch of salt and then cook for twelve minutes. Drain and reserve. Meanwhile, begin heating the milk and the vanilla pod, de-seeded and split, until it comes to the boil. Add the rice and cook for twenty minutes, stirring every now and then. Add 100g of sugar and cook for a further two minutes. Reserve. Preheat the oven to 200 degrees and butter an oven-proof dish. Wash the apples and slice the top off to create a lid. Remove some of the centre of the apple and we fill with the rice mixture. Add a spoonful of sugar, a knob of butter and cook in the oven for 30 minutes.
