Serves 4

  • 125g flour
  • 30g butter
  • ¼ ltr water
  • 4 eggs
  • salt
  • icing sugar
  • Optional: chocolate
  • Whipped cream

Place the water, butter, lemon peel and salt in a pot. When the mixture begins to boil add the flour and mix well until the mixture no longer sticks to the side of the pot.

Take it off the heat and allow to cool. Incorporate the eggs one by one. Leave the mix to rest for up to two hours.

Heat the oven to 210 degrees. Pipe spoonfuls of the mixture onto oven paper using a piping bag. Bake for 15 minutes.

When they are ready allow them to cool.

Place the profiteroles in a dish and decorate with icing sugar. Optionally, you can also decorate them with chocolate and fill them with whipped cream.
