Barceloneta Potato “Bomba“

Ingredients for 4 people:

  • 400 gr potatoes
  • 1 onion
  • 150 gr minced beef
  • 1 cayenne pepper
  • 1 garlic bulb
  • 3 grated tomatoes
  • olive oil
  • flour
  • bread crumbs
  • eggs
  • salt

How to make the potato “bombs”

Once cleaned, put the potatoes in water to boil for around 30 minutes. They should be soft so the time will depend on the size of the potatoes.

While the potatoes are cooking, start making the filling. We’re trying to make a Spanish style “sofrito” with the minced beef and finely diced onion and garlic. When the mince starts to brown add the onion, garlic and cayenne pepper, then stir in the tomato sauce, and let cook for around 10 minutes or until it is dry.

Once the potatoes are cooked, let them cool before peeling them and mashing them with a fork. Add salt, freshly ground black pepper and a little olive oil. Stir well.

Now make some balls with the mashed potato and squash them. Put a little filling in each one and close them back up. To fry them, lightly dust with flour, egg and breadcrumbs.

BRAVA SAUCE

  • 3 tablespoons olive oil
  • 1 tablespoon flour
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon hot paprika
  • 150 ml broth
  • salt
Start by putting olive oil in a frying pan and adding a tablespoon of flour. Add the broth slowly while stirring the sauce. Once it thickens, add both the smoked and hot paprika. Test the sauce and add salt if needed.
AIOLI SAUCE
·      1 whole egg
·      1 garlic clove
·      1 glass sunflower oil
Beat the egg with the garlic and add the oil little by little, without stopping. We’ll end up with a thick, smooth sauce.
